About Us

My name is Magaly Diaz, I am the founder of Diaz Tacos and Greens. This new home-based endeavor sprouted from my love of cooking and my new fascination for plant-based dishes. With Diaz Tacos and Greens, I’d like to highlight the healthier side of Mexican cuisine while diving through pre-Columbian Mexico, its power foods, and its love for fresh and blunt flavors.

Maiz dough made up the majority of the cuisine for the Aztec, Mayan, and Incan cultures. Although there was undoubted diversity of vegetables and herbs, the holy trinity of maiz, frijoles (beans), and chiles have always reigned supreme. Naturally, I embark on this journey by way of tacos. I am really excited to kick off Diaz Tacos and Greens with Tacos Dorados, which is a veganized version of my mom’s famous recipe.

We will be operating softly through the summer, slowly incorporating more options to our Sunday and catering menu.
